Today I relaxed and enjoyed spending time with Randy and my family. Labor Free and Diet Free ;) Tomorrow I’m looking forward to my morning PJ’s iced coffee, editing, bootcamp and going to the grocery to load up on fruits and vegetables. I’ve been trying to keep more fresh foods in the house. We need a farmers market around here. When I lived in Baton Rouge, they had one and it was awesome! Wish there was one close by. The key is to cut everything up and put it in plastic containers right when you get home so you are less tempted to eat junk. Instead you’ll reach for something fresh.
One of my favorite things to eat is Carrots dipped in Hummus. However, Hummus from the grocery doesn’t always taste good in that plastic container. Here’s a reciepe that I found online that I really love. If yall like Hummus, try this one out. I make it all the time.
:: HUMMUS ::
- 1 – 16 oz can of chickpeas or garbanzo beans
- 1/4 cup liquid from can of chickpeas
- 3-5 tablespoons lemon juice (depending on taste)
- 1 1/2 tablespoons tahini
- 2 cloves garlic, crushed
- 1/2 teaspoon salt
- 2 tablespoons olive oil
Drain chickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth.
Place in serving bowl, and create a shallow well in the center of the hummus.
Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).
So today we are at my cousins with the family eating BBQ and just enjoying each others company for Labor Day. I flung my hair off my shoulder and happen to touch my ear. I notice one of my diamond earrings was missing. So I’m sitting there with one earring? Here’s the story on my earrings… Randy bought me my first pair of diamond studs a few years ago from Ramsey’s for my birthday. They are very special to me. I am searching all over, I am missing one earring. It’s no where to be found at my cousins house. I came home and was thinking that maybe I lost it while I was sleeping last night. It wasn’t in the bed. It wasn’t in the bathroom or on the floors in the house. I am thinking its gone the whole time, so then a few hours later, I was like hmm… maybe it fell off while I was getting dressed. Sure enough, I opened my closet and there was my earring and back laying on the floor. Gotta love when that happens. So be careful with your jewelry, I’m just lucky I found the other earring today! Tomorrow is back to work. I’ll be editing photos from this past weekends shoots. I hope that you all enjoyed spending time with your families today. It’s days like today that we need to soak in all that’s going on around us and remember to be appreciative of the life God has given to us. I’m thankful to have a career that allows me to take off on days like today, it was really nice to spend a Monday with my loved ones.
